Blueberry Thyme Press

Earthy, sweet, and grown-up. The lemonade for slow Sundays.

Ingredients

  • 1 cup blueberries
  • 3 sprigs fresh thyme
  • 5 lemons
  • 1/3 cup sugar
  • 5 cups water
  • Ice

Steps

  1. 1

    Simmer blueberries, thyme, and sugar with 1 cup water for 8 minutes until syrupy.

    Strain the syrup, pressing the berries.

  3. 3

    Juice the lemons into a pitcher and add the syrup.

  4. 4

    Top with the remaining cold water and stir.

  5. 5

    Serve over ice with a thyme sprig.

Leo's tips

  • Frozen blueberries work just as well as fresh.
  • Lemon thyme is even better if you can find it.
  • Pour through a sieve a second time for a sparkling clear drink.
